Slow travel means we can take the time to cook up Slow travel means we can take the time to cook up simple wholesome meals. Like these chicken parcels wrapped in prosciutto, roasted with local veges, plenty of garlic cloves, and all brought together deliciously by fresh rosemary and sage picked from our garden. The eggplant is SO good at the moment 😍 

Couldn't resist adding in those bright and cheery Cherry tomatoes for a burst of Italian flavour towards the end.

When I see peas in their pods, I'm instantly back When I see peas in their pods, I'm instantly back in Nana's kitchen, a big bowl between us as we shelled them for dinner. I love that simple memory.

And the peas? Some didn't make it into the bowl for dinner. Their sweet crunch too much temptation. 

Turns out they're definitely little circles of goodness:

🫛 rich in fibre to support digestion and hormone health
🫛 good source of plant protein
🫛 full of Vitamin C, K and folate 
🫛 antioxidants to support immunity and your eyes

Whether you eat them raw, lightly steamed, still frozen (who else loves frozen peas?), or thrown in a slow cooker at the end, peas bring a lovely bright sweetness and a nutritious hit to many dishes.

Try them like this:
🔸️add to salads for crunch and coloyr
🔸️toss into soups, curries, stews or any slow cooked for extra fibre and protein
🔸️blend into a pea and mint dip
🔸️stir through scrambled eggs or omelets
🔸️smash lightly with a drizzle of olive oils and lemon as a quick, delicious side dish 

Peas remind us that small things can be powerful, just like memories made with Nana 💚

There must be hundreds of recipes for garlic prawn There must be hundreds of recipes for garlic prawns but sometimes cooking by feel (and taste) works a treat. This dish was created not by following a recipe but by using up a few ingredients hanging around in the fridge or growing in pots on the balcony.  Not the prawns, of course - they were fresh 😆

Garlic 🧄
Cream🍶
Tomato paste 🍎
Half an onion🧅
Garlic chives🌱
Dilll🌿
A splash of dry vermouth 🍾
Fresh prawns🦐

It's not often we eat out for breakfast when in Ca It's not often we eat out for breakfast when in Canberra, but when we do, we try to choose a healthy option.

Breakfast sets the tone for the whole day ahead, so why not start strong with a breakfast that nourishes your body.
