Ginger Nut Bites

Ginger and Christmas some how go together, and you can’t get a better festive mix than nuts and ginger.

These little bite sized treats are gluten free and packed with the goodness of raw cashews, almond meal and coconut for a healthy fat hit, the delicious zing of fresh ginger and the healthy blood sugar benefits of cinnamon – you’ll love them!

Using all raw ingredients and taking no time at all to mix together, keep a batch on hand in the fridge to impress your drop in visitors this Festive Season.

You’ll need:

  • 1 piece of fresh ginger root, peeled (about 2 cm or the size of a walnut – use more if you love ginger)
  • 8 dates
  • 1/2 cup raw cashews
  • 1/4 cup of almond meal
  • 1 tablespoon rice malt syrup
  • 1/4 teaspoon cinnamon
  • Desiccated coconut to coat (you can toast the coconut if you love toasted coconut)

Mince the fresh ginger by finely grating or mincing in the food processor.

Add the remaining ingredients (except the coconut) in a food processor, blending until the mixture has the consistency of crunchy peanut butter, with small portions of the cashews still visible.

Roll small portions between your palms into bite sized balls.  Roll each ball in the coconut to coat.

Store in an airtight container in the fridge.
