The variations of frittata are endless and only limited by your imagination, and perhaps by what’s in season.
A frittata is also a good way of using up veggies in your fridge before restocking.
Another cook once, eat twice/thrice dish
Here’s one to add to your repertoire. It’s cooked in the one pan on the stove and finished off in the oven. Less washing up – always a good thing for the kitchen hand!
A simple Sunday Veggo Night option that covers all your nutritional needs for healthy eating – protein from eggs and pine nuts, plant iron from the spinach, coupled with semi-dried tomatoes for Vitamin C which helps with iron absorption
Here’s what you need:
- 5 organic or free range eggs
- 1 cup cream
- 300g pumpkin, diced into 1 cm cubes
- 1 red onion, sliced
- 1 teaspoon cumin seeds
- 1/3 cup pine nuts, you can dry roast them beforehand if you want
- 2 cloves garlic, chopped
- 1/2 cup semi dried tomatoes, chopped (but not too small)
- a generous handful of baby spinach leaves
- 2 tablespoons fresh sage leaves
- 150g feta (we used Australian feta of course), broken into small pieces
- 1/2 cup parsley, chopped
- 1/3 cup of parmesan cheese
Here’s what you do:
In a heavy based or cast iron frypan (choose one that you can also put in the oven), saute the pumpkin for 10 -12 minutes in a couple of tablespoons of olive oil until the pumpkin begins to soften and caramelise.
Add the onion and stir for 1 minute to soften.
Add in the cumin seeds, pine nuts and garlic and take off the heat to avoid burning the garlic. Note – a cast iron pan will continue to cook for a while. Season with salt & pepper.
Add the semi-dried tomatoes, feta, baby spinach, parsley and sage leaves.
In a bowl, whisk the eggs and cream together.
Pour the egg mixture over the veggies in the pan and gently combine the ingredients. Let the mixture bake (without stirring) on the stove top on a low heat for 2-3 minutes.
Sprinkle with the parmesan cheese and place the pan in the oven at a moderate temperature and cook until golden brown on top and the egg has set.
