When peaches are in season, the weather is hot.
I love the great range of summer fruits available and there’s nothing better than forgaging at your local fresh food market for sweet and juicy stone fruits like peach, nectarine, apricot and mango.
Peaches pair deliciously with goat’s cheese and toasted nuts like walnuts or cashews. To really bring this salad alive, use your favourite sweet balsamic dressing. We always have a fig balsamic in the cupboard for such dishes, but you can use any so long as it’s not too acidic.
Here’s what you need:
- Salad leaves – a mixed bunch or use rocket, spinach or any lettuce
- 1/3 cup walnuts – toasted
- 150g goat’s cheese, in pieces
- 1 small red onion, diced or sliced
- 1 peach, sliced
- 1 small beetroot, julienned
- Handful of snowpeas, chopped
- Fig balsamic vinegar for dressing
Here’s what you do:
Lay the salad leaves on a plate and top with the rest of the ingredients. Dress with your favourite balsamic dressing.
So simple, so easy, so tasty!
Another Idea
Try adding in slices of pancetta – it goes fantastically well with peach. Believe me!
