Beetroot, Mint and Yoghurt Salad

Australia Day is a relaxing and happy holiday, and with all the hype around lamb, here’s a simple, raw and great tasting dish which goes extremely well with any lamb dish.

Beetroot is an amazing healthy root vegetable that lends itself to so many dishes, cooked or raw, hot or cold.

So, if you haven’t had fresh beetroot on your shopping list for a while, now’s the time.

This simple, quick and easy recipe takes minutes to assemble and there’s no cooking.

You’ll need:

  • 1 medium sized raw beetroot, grated
  • 1 or 2 tablespoons of chopped fresh mint
  • 2 tablespoons of your favourite Greek yoghurt

Combine the ingredients in a bowl and your done!

Variations:

  • try adding a teaspoon of grated ginger
  • and/or a teaspoon of chopped chives or sliced shallots
